Smoked fish (think salmon and trout) plays a big part in many flavorful appetizers, including this one, which pairs smoked cod with fresh tomatoes and soft goat cheese (in a log), both sliced thinly and arranged, carpaccio-style, in an overlapping manner on a serving platter. Sauteed green bell peppers and a drizzle of balsamic are the finishing touches. You'll want to serve plenty of rustic bread, flatbreads, or crackers alongside.

  • 1 green bell pepper (seeded and sliced)

  • 8 ounces cod (smoked)

    Directions

    1. Peel the tomatoes and slice them forming a bed for the salad.
    2. Place the goat cheese slices on top of the tomatoes.
    3. Saute the bell pepper in a skillet on medium heat with 1 tablespoon of oil.
    4. Finish with a layer of the cod, a pinch of salt, and a splash of vinegar.
