Description

Ready in less than an hour, this delightful cake is full of light fruity flavors. With a light texture, this cake is flavored with fresh orange juice and grated coconut resulting in a great summertime dessert.

Ingredients

3 eggs
150 grams sugar
100 grams margarine (at room temperature, or softened in the microwave)
100 grams grated coconut (plus a little more for sprinkling)
1 orange juice
50 grams flour
1 tablespoon baking powder

Directions

1Preheat oven 180 degrees Celsius.
2Grease and flour a small tray (20x20 centimeters). Set aside.
3Beat the eggs with the sugar until they get fluffy. Add the softened margarine, the coconut, and the orange juice. Beat again until well mixed.
4Add the flour and baking powder, and mix without beating.
5Place the dough in the cake pan, and bake for 20 minutes.
6Check the cooking with a toothpick, remove from the oven, and while cake is still hot, sprinkle with a little grated coconut.
7Cut into squares, and serve.
