Description

Ditch the pancakes, these Polenta cakes will fill you up. Mint leaves will leave your mouth feeling refreshed, while the goat cheese gives these cakes a savory, rich flavor.

Ingredients

  • 175 grams flour
  • 75 grams polenta
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 50 grams butter (melted)
  • 1/2 cup whole milk
  • 1 eggs
  • 100 grams goat cheese (broken into small pieces)
  • 12 mint leaves

Directions

  1. Preheat the oven to 390°F.
  2. Mix the flour, polenta and baking powder with a pinch of salt in a bowl.
  3. In another bowl, mix the melted butter, milk and egg.
  4. Combine the two mixtures into one bowl and quickly mix them together. Add the goat cheese and mint leaves.
  5. Grease a muffin tin, unless using a flexible silicone mold.
  6. Fill the muffin molds with the dough.
  7. Cook for about 25 minutes until the cakes are golden brown.
