    Directions

    1. Cook beef and onions over medium-high heat until cooked. Drain, then add cumin, salt, chili powder, pepper and ranch seasoning. Transfer to a 4-Qt slow cooker. Stir in beans, chicken stock, enchilada sauce, corn, chopped tomatoes, and green chilies. Cover and cook over low for 6-10 hours. In a small bowl combine cornbread mixture and place on top of meat mixture. cook 1 hour more with lid ON until toothpick comes out clean. Sprinkle with pepper jack cheese, cover for 5 addtnl minutes. squeeze lime and sprinkle on cilantro to taste.
