Ingredients

  • 1 3/4 pounds beef (lean, cubes, cut just over an inch square, I used a 2 1/2 lb. chuck roast and trimmed off all the fat.)
  • 2 teaspoons olive oil
  • 1 onion (large, chopped into pieces about 3/4 inch)
  • 14 ounces homemade beef stock (or beef broth, simmered to reduce to 3/4 cup)
  • 1 cup salsa (I used Pace Picante Sauce Medium)
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano (Mexican, or regular oregano will probably be okay)
  • 1 tablespoon crushed garlic (from a jar is fine)
  • 1 can olives (6 oz. drained weight drained and cut in half)
  • 4 ounces green chiles (diced, not jalapenos unless you like it really spicy)
