- 2 bell peppers (preferably red and yellow, chopped)
- 1 Spanish onion (chopped)
- 5 carrots (chopped)
- 8 cloves garlic (minced)
- 4 oz. green chiles (chopped, available in ethnic section of your supermarket)
- 2 chipotle peppers in adobo sauce (chopped and seeds removed)
- 14.5 oz. diced tomatoes (organic fire roasted, such as Muir Glen, with juices)
- 1/2 cup beer (don’t use light beer)
- 1 whole lime
- 1/2 cup organic vegetable broth
- 2 tsp. honey
- 1 tsp. cumin
- Tabasco (to taste)
- sea salt (Unrefined, to taste)
- cilantro (chopped, for garnish, optional)
- 1/2 lb. squid tubes (sliced into ½ inch rings and tentacles)
- 3/4 lb. sea scallops (diver, rinsed and patted dry)
- 2 lb. mussels
- 3/4 lb. grouper (or sea bass, halibut or snapper cut into bite sized pieces, rinsed and patted dry)
- 1/2 lb. lobster (shell removed, but keep the shell, cut into bite-sized pieces or shrimp, peeled and deveined)
