  • 4 pork chops (thick-cut)
  • 1 tablespoon coconut oil
  • 1/2 cup chicken broth (or dry white wine)
  • 2 teaspoons apple cider vinegar
  • 1/4 cup dried figs (finely chopped)
  • 1 tablespoon honey
  • 1/2 teaspoon fresh thyme
  • 1/2 teaspoon fresh sage

    Directions

    1. Heat the coconut oil in a heavy-bottomed pan over medium heat. Brown the pork chops in batches, about 5 minutes a batch, and transfer to the slow cooker.
    2. Add the figs with the vinegar, broth, herbs and honey, making sure to stir the honey so it's not a clump. Cook for 6-8 hours.
