The silky braising liquid — spiked with vin santo—cloaks the mixture, which includes potatoes and peas. Fragrant with rosemary and warmed from a pinch of nutmeg, it commingles in the slow cooker for hours, filling your home with the most inviting scent. Ingredients

600 grams meat (for stew, medium sized pieces)
2 green onions
1 garlic cloves
4 potatoes (–5 large)
1 cup frozen peas
3 ounces vin santo
600 grams milk
extra-virgin olive oil
flour
salt
ground black pepper
rosemary
ground nutmeg

Directions

1Flour the pieces of meat, slice the onions, and cut the potatoes into cubes.
2Pour some extra virgin olive oil into the slow cooker, add the garlic, green onions, meat, potatoes, and peas.
3Add the milk and the Vin Santo to the slow cooker.
4Season to taste with salt, pepper, rosemary, and nutmeg, and stir well.
5Set the slow cooker to high for 5 hours and stir occasionally.
6Serve hot.
