Delicious. Very easy to prepare. I took the advice of a previous reviewer and removed the rind from lemon before slicing. I did reserve a few small bits of rind and added them. Served with couscous.

This recipe is amazing! I took a suggestion from someone else and added kalamata olives and capers. I use boneless, skinless chicken thighs and added some chicken broth. The flavor is spectacular!

I made this in my instant pot, high pressure over 20 minutes with quick release and served over quinoa. Couscous would’ve been better but quinoa is what I had on hand. Note to self read the comments before shopping next time ;) The only thing I will change next time is leave tomatoes whole. The pressure obliterated my sliced tomatoes haha! But awesome recipe I was looking for something different to try and this was a hit!

It was very easy to prepare and our kids loved it. We decided after it was made that we could likely cut the garbonzo beans in half as it got to be a lot of beans. Great flavor.

I used coconut oil instead of avocado oil, hot paprika and a teaspoon of chopped serrano pepper for additional heat. I imagined this meal in a bowl rather than a plate, so I added a 15 oz. of chicken broth. It tasted great, but a bit bright with the lemon. Next time I will use fewer lemon slices and eliminate the lemon juice.
