Description
When I use Italian Sausage instead of breakfast sausage, I'll switch out the ketchup for marinara or other jarred spaghetti sauce and add oregano, basil, whatever. Tried a Greek version with lamb and beef and fennel that wasn't bad,

- 1 lb. ground sausage
- 1/2 cup panko
- 2 eggs
- 1 packet onion soup mix
- salt (/pepper/herbs/spices of your choosing)

Directions
- let the meats sit for a bit to get warmer or they won't mix well
- Combine all ingredients
- Form loaf and cook in Slow cooker for 4-6 hours
- Optional - Remove from slow cooker and put in 400 degree oven for a few minutes. Top with cheese if you like
- Optional - strain slow cooker juices and use to make gravy/sauce

Ingredients list is missing the ketchup. Mix half a cup with the meatloaf and top it with the other after it cooks. I usually top this with BBQ sauce and cheese if anything. Make sure the meats are room temp before you mix them or they won't combine well.
