This is an easy yet hearty and delicious stew that is vegan, low-calorie, and has a low glycemic index.

Ingredients

  • 1/4 cup onion (diced)
  • 1 clove garlic (diced)
  • 1/2 cup pigeon peas (or other lentils)
  • 1 large carrot (peeled, halved, then cut into half-rounds)
  • 1 stalk celery (diced)
  • 1 bunch curly kale (deveined and chopped)
  • 1 sweet potato (peeled and cut into 1/2-inch cubes)
  • 1 serrano pepper (diced)
  • 3 cups vegetable stock
  • 2 teaspoons cooking oil
  • 1 bay leaf
  • 2 sprigs fresh rosemary
  • salt

Directions

  1. Add the cooking oil to a skillet and cook the onions until they begin to caramelize. Add the garlic and cook until fragrant but not burnt.
  2. Add the cooked onions and garlic, along with all of the remaining ingredients, to the slow cooker. Cook on high for 4 hours.
  3. Remove the bay leaf and rosemary sprigs before serving.
