Recipe adapted from Hamlyn's all colour cook book.

Ingredients

  • 1 tablespoon oil
  • 750 grams pork shoulder steaks (cubed and fat discarded)
  • 1 leek (thinly sliced, the green and white parts kept seperate)
  • 2 tablespoons plain flour
  • 300 milliliters cider
  • 300 milliliters chicken stock
  • 200 grams carrot (diced)
  • 1 teaspoon sage

Directions

  1. Heat the oil in a pan. Sear the pork pieces over a high heat, then transfer to slow cooker.
  2. Add the white leek slices to the pan and fry for 2-3 minutes, until softened. Stir in the flour, then gradually mix in the cider and stock. Add the carrot and sage and sprinkle with salt and pepper. Bring to the boil, stirring. Pour the mixture in the slow cooker and cook on low for 8-10 hours or until the pork is tender. Serve with dumplings or mashed potato.
