Delicious meal with the soup! Had it with some garlic toast points and sprinkled some pumpkin seeds on top for garnish. Fantastic!!

Added a green apple. Next time I would use a whole butternut squash vs 1/2 of another kind. I cooked this in the instant pot on soup setting - would do instant release next time - took about 30 min in pot.

Easy and delicious. Although you don’t need to peel the squash before slow cooking, it may actually be easier to do so.

This soup was so simple! I cut my squash into more pieces and then only cooked on high for two hours. I realize now that might have diminished the flavor but still so good! Added a little broth back into the squash during emersion, also added turmeric and red pepper flakes. Delicious!!!

This was excellent! I use my instant pot because I was low on time and it was a lifesaver. I used 2 pounds of precut butternut squash and basically followed her directions by putting it with the chicken broth and onion (didn't have shallot) first. I put it on the soup function for 33 minutes. When it was done I let the steam out and added the coconut milk and nutmeg. I also added a bit of cinnamon. Or use my immersion blender to mix it up and it was fantastic!
