  • 4 pounds beef brisket (flat-cut Corned)
  • 1 yellow onion (medium-large, peeled and cut into 4-8 wedges)
  • 1 carrot (large, cut into large pieces, does not need to be peeled)
  • 2 stalks celery (cut into 3-4 inch pieces)
  • 1 packet corned beef (will be included when purchasing the corned beef)
  • 1 bay leaf
  • 5 sprigs fresh thyme
  • 1 pint dark beer (medium to, I used Green’s Gluten-Free Dubbel Dark Ale)
  • 1 cup water
  • 4 potatoes (medium, thin-skinned potatoes, e.g. Yukon Gold, Red New, etc., scrubbed and cut into quarters)
  • 2 carrots (large, peeled and cut into 3-4 inch lengths)
  • savoy cabbage (or Optional: small head of green, halved and one half cut into wedges)
