I didn't use celery or pancetta and it was pretty delicious. I used linguini instead of rigatoni because it was all I had. Definitely let the meat cook all day in much smaller pieces. I think the pancetta would have made it too salty.

This has got to be written by an American. All measures are ridiculous and it's like they're written by someone who doesn't understand the metric system, which means it must be an American since the US is the only country in the universe which doesn't use the scientific method to measure things. Apart from that the original Genovese does not require tomato paste and 450 grams of pasta for seven people is nothing. It should be at least 80 / 120 per person so for seven people it should be between 560 and 840 grams. 560 if they're all on a strict diet, 840 if they're having normal sizes. But 450 grams are for kids. 65 grams each? That's basically half a plate! And 910 grams of onions LOL who should put 0.91? 10 grams are absolutely nothing, why would anyone add an extra 10 grams to 900 grams of onions? It's a kilo, so a thousand grams. Look all measures are incomprehensible so you should probably adjust those measures. Plus the slow cooker isn't really required. A heavy pot like a pentolone rosso would do the job. Any big tall large pan would do in fact. It has to cook for a very long time but at very low heat, I was going to give two stars but it made me laugh so I'm giving it three stars LOL AND NO OREGANO!!!!!!!!!!!!!!
