  • 3/4 skirt steak
  • 1 yellow bell peppers (each red and, seeded and julienned)
  • 1 poblano pepper (seeded and julienned)
  • 1 yellow onion (sliced into thin rounds)
  • 1 Orange (sweet, or tangelo)
  • 2 limes
  • 1 ounce tequila
  • 1 tablespoon fresh cilantro (chopped fine)
  • 1 jalapeno pepper (seeded and chopped coarse)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 3 wheat tortillas (large white, warmed)

    Directions

    1. 1. Mix the orange juice, lime juice, tequila, cilantro, and jalapeno together and marinate the steak in it for 15 minutes to 1 hour in the refrigerator.
    2. 2. Saute the onion slices over medium heat until they have caramelized and partially turned brown. Reserve in a 200 *F oven with the serving plates.
    3. 3. Grill or saute the marinated steak until the internal temperature reaches 120 *F for rare or 130*F for medium rare. Let the steak cool and slice it into 1/4 inch slices then reserve with the serving plates and onions.
    4. 4. Pour the oil into a clean saute pan and saute(sweat) the julienned peppers and garlic for a few minutes until they start to soften.
