This dish was amazing! I was worried it was going to be bland but not at all. The ingredients blend together very nicely. Will definitely be making this again!

I made rhis for my son and I for lunch today, as we both love vegetables! I followed the recipe almost exact, I just added a few 'extras'! I added in some chopped scallions and left over cooked broccoli, just chopped it up and threw it in too. I used Parmesan cheese and panko bread crumbs. its delicious! A perfect light lunch with a piece of fruit.

Made this for dinner last night! I followed the recipe but did the below modification: I basically looked in my fridge to see if theres anything I need to get rid of. 2 cups of Zucchinis 1 1/2 cups of chopped kale 1/2 cup of chopped onions 1 can of corn 1 1/2 cup of cubed Andouille sausage Used Almond meal instead Used Panko Breadcrumbs instead Added 3 eggs, 1/2 cup of almond meal and 5 oz 0% plain Skyr yogurt in the mixture to thicken the consistency I'm also eating it again for Breakfast the next morning, add some hot sauce to it, it's like a quiche/casserole.
