Ingredients

  • 1/2 loaf french bread (cut into 2-inch cubes, whole grain French bread also works great here!)
  • 1 red pepper (large, diced)
  • 1/2 green pepper (large, diced)
  • 1/4 cup green onions (chopped, plus more for garnish)
  • 4 slices cooked bacon (chopped)
  • 1 1/4 cups skim milk
  • 4 eggs
  • 1 cup shredded reduced fat cheddar cheese (farmer's marble cheese also works great!)
  • 1/2 teaspoon mustard (dried)
  • 1 teaspoon Sriracha
  • 1 1/2 teaspoons worcestershire sauce
  • 2 salt (and pepper)
  • 3 sprays canola oil (for the baking dish, I like to use my Misto Oil Sprayer for this job!)

Very good and very tasty! My family loved it and we will for sure be making it again. A hit with the kids too!!!!!!
very tasty.. and filling! I'm not usually a fan of soggy bread (example: bread pudding) but with the eggs it worked for me and was delightful! I used whole milk instead of skim so it was a few more calories.
