This bread pudding is lower in calories and fat but sacrifices nothing in flavor or texture! The recipe is a Yummly original created by Sara Mellas.
Ingredients

- nonstick cooking spray
- 1 loaf Italian bread (day-old, 16-18 oz. per loaf)
- 3 large eggs
- 2 1/2 cups low fat milk
- 1/3 cup granulated sugar
- 2 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 pinch salt
- powdered sugar (for serving)

Directions
- Preheat the oven to 350°F.
- Spray a 9-inch square baking dish liberally with nonstick cooking spray. Set aside.
- Cut the bread into 1-inch cubes and set aside.

I made a few changes to the recipe. I used a 1/2 cup of Splenda and used Almond Milk. Then I added 1/2 cup of Cocoa and 1/4 cup of walnuts to make it a Chocolate Walnut Bread Pudding. It's Delicious and have made itthis way a number of times

Turned out great! I used almond milk, day old whole wheat bread and monk fruit sweetener to make this a little healthier 🙂
