Ingredients

  • 7 ounces long grain rice
  • 2 tablespoons oil
  • 8 3/4 ounces sirloin steaks
  • 13 1/2 ounces chopped tomatoes (with herbs)
  • 2 ounces tortilla chips
  • 2 ounces cheddar cheese (grated)
  • 4 1/2 ounces jalapeños (pickled, drained, 4 reserved for garnish, remainder sliced)

Directions

  1. Preheat oven to 400°F. Cook rice in boiling salted water according to package instructions.
  2. Heat oil in a frying pan and sear steaks over high heat until browned on both sides. Season then transfer to an ovenproof dish. Top with tomatoes and tortilla chips. Sprinkle with cheese then bake for 6-8 mins, until cheese is melted and bubbling.
  3. Drain rice and add jalapeños. Serve with steaks and garnish with whole jalapeños.
