  • 3 tablespoons low fat butter (spread)
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup self raising flour
  • 3 tablespoons cocoa powder
  • 1/2 cup skimmed milk
  • 1/4 teaspoon baking soda
  • 1 1/2 cups powdered sugar
  • 1/4 teaspoon instant coffee powder

    Directions

    1. Preheat oven to 350°F. Lightly spray a deep 8 inch round cake pan with oil and line base with baking paper.
    2. In a bowl, using an electric mixer, beat spread and sugar until smooth and creamy. Add egg, beating well.
    3. Sift flour and 2 tbsp cocoa together. Fold into creamed mixture alternately with milk, beginning and ending with the flour mixture.
