Description

These simple muffins are made with no butter and incorporate the unique sweetness and texture of carrots into the muffin. Easy to make, nutritious, and delicious, these simple carrot muffins are a must bake to have on hand.

Ingredients

  • 250 grams carrots (peeled)
  • 4 medium eggs
  • 100 grams oil (or olive oil)
  • 280 grams sugar
  • 220 grams flour
  • 1 tablespoon baking powder

Directions

  1. Preheat the oven to 180 C.
  2. Prepare the muffin molds, greasing them with margarine and sprinkling them with flour.
  3. Place the carrots in the food processor and chop them until they are grated.
  4. In a large bowl, mix the eggs, oil, and sugar, and stir well. Add the shredded carrots.
  5. Add the flour and baking powder and stir without beating.
  6. Fill the muffin cups 2/3 full.
  7. Bake for 20-25 minutes. When they turn brown they're ready.
  8. Cool on a wire rack for 5 minutes.
