Description

These simple muffins are made with no butter and incorporate the unique sweetness and texture of carrots into the muffin. Easy to make, nutritious, and delicious, these simple carrot muffins are a must bake to have on hand.

Ingredients

250 grams carrots (peeled)
4 medium eggs
100 grams oil (or olive oil)
280 grams sugar
220 grams flour
1 tablespoon baking powder

Directions

1Preheat the oven to 180 C.
2Prepare the muffin molds, greasing them with margarine and sprinkling them with flour.
3Place the carrots in the food processor and chop them until they are grated.
4In a large bowl, mix the eggs, oil, and sugar, and stir well. Add the shredded carrots.
5Add the flour and baking powder and stir without beating.
6Fill the muffin cups 2/3 full.
7Bake for 20-25 minutes. When they turn brown they're ready.
8Cool on a wire rack for 5 minutes.
