Description
Though easy to make, this moist, spiced carrot cake still includes the classic raisins, walnuts, and luscious cream cheese frosting. Serve the two layers individually, or stack them for a layer cake. The recipe is a Yummly original created by Sara Mellas.

- nonstick cooking spray
- 4 medium carrots (about 2 cups grated)
- 1 oz. walnuts (1/4 cup per 1 oz., finely chopped, optional)
- 3/4 cup canola oil
- 3/4 cup light brown sugar (packed)
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup unsweetened applesauce
- 1 tsp. vanilla extract (for cake)
- 2 1/4 cups all purpose flour
- 2 tsp. pumpkin pie spice
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt (scant, for cake)
- 1/4 cup raisins (optional)
- 12 oz. cream cheese (softened)
- 4 oz. unsalted butter (4 oz. is 1 stick, softened)
- 3 cups powdered sugar
- 2 tsp. vanilla extract (for frosting)
- 1/8 tsp. salt (for frosting)

Directions
- Preheat the oven to 350°F.
- Spray two 9-inch round cake pans with nonstick cooking spray. Set aside.
- Grate the carrots and finely chop the walnuts.

it turned out great. taste was amazing and moist. the frosting came out to be a lot leftover or you can layer it on heavy but that tasted good also

I'm diabetic, so I substituted Stevia for the sugar and brown sugar. Tastes great and doesn't spike my blood-sugar.
