- 1 lb. fresh cod fillets (3-4 fillets per pound)
- 1 tsp. salt
- 1/4 tsp. black pepper
- 2 tsp. extra-virgin olive oil
- 1 lemon (large, cut in half, for serving)

Directions
- Preheat the oven to 375°F.
- Line a baking sheet with parchment paper.
- Season the cod fillets on both sides with the salt and pepper and arrange on the prepared baking sheet. Drizzle evenly with the olive oil.

This turned out perfect! I used my vegetable peeler and sliced thin pats of butter to put on top of the fish in place of the olive oil. My cod was pretty thin so 10 minutes cooked it to perfection!

cheap, decent, and super easy! a quick shake of musket powder red made for a great dinner
