Shrimp, Crab and Avocado Phyllo Cups

Ingredients

  • 6 sheets phyllo dough
  • 10 ounces crab meat (fresh)
  • 12 large shrimp (cooked, peeled, deveined and coarsely chopped)
  • 1 avocado (large, peeled, pitted and chopped)
  • 1 mango (peeled, pitted and chopped)
  • 1/3 cup sauce (sweet chlli)
  • 1 onion (small, finely chopped)
  • 1/4 cup cilantro leaves (fresh)
  • 1 lime (juiced)

Directions

  1. Preheat the oven to 400°F. Lightly grease a 12-cup muffin pan.
  2. Layer 3 sheets of phyllo, spraying each sheet with no stick cooking spray. Repeat with remaining 3 sheets in a separate stack.
  3. Cut each pastry stack into 8 even squares. Gently press squares into 8 of the muffin cups. Gently press remaining squares over phyllo in pan, rotating slightly to form a star shape. Bake for 8-10 mins, until golden. Cool slightly.
  4. Mix crab meat, shrimp, avocado, mango, chili sauce, onion, cilantro and lime juice in a large bowl. Spoon mixture into phyllo cups. Serve immediately.
