Ingredients

  • 300 grams shrimp
  • bread slices (Alentejo, preferably a day old)
  • 1 onion (small, finely chopped)
  • olive oil (to taste)
  • 2 garlic cloves
  • spice
  • italian seasoning
  • 100 grams smoked salmon (flakes)
  • coriander (or Chopped pennyroyal)

Directions

  1. Steam the shrimp.
  2. Soak the bread slices in the water used to steam the shrimp.
  3. Saute the onion in olive oil until translucent. Add the garlic cloves.
  4. Peel and chop the shrimp.
  5. Add the shrimp to onion and garlic, and saute slightly, then add the slightly drained bread and whisk until well shred. Season with salt and Italian seasoning.
  6. Add the salmon flakes.
  7. Cook lightly, and remove from heat.
  8. Add pennyroyal, stir well.
  9. Serve immediately.

This is an easy recipe that results in a flavorful and satisfying dish. Using the water that steams the shrimp to soak the bread is such a good idea. I enjoyed it so much, I made it again for a small dinner party. I doubled the amount and served it in a dish surrounded by toasts and dark bread slices to spread it on. Everyone loved it.
