Ingredients

  • 4 mushrooms (large)
  • 8 shrimp (chopped)
  • 1 garlic clove (diced)
  • fresh parsley (diced)
  • olive oil
  • salt

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Remove the mushrooms’ stems and wash well to remove any grit.
  3. Separately, marinate the chopped shrimp for 20 minutes in a mixture of diced garlic and parsley.
  4. Stuff the mushrooms with the shrimp mixture. Place them on a baking tray and drizzle with oil and salt to taste. Bake 15 minutes.

Stuffed mushrooms are one of those things that feel like they are a million calories but are actually pretty low. I love making these for dinner parties. I make them just for my family on the rare occasion, but I am usually the one who ends up eating them all. This is an amazing recipe from start to finish.
