What can get better than fried shrimp? These appetizers will have you licking your fingers and asking for more. They go great with beer or wine. A perfect way to start an evening among friends.

Ingredients

  • water
  • 1 lemon
  • 1 bay leaf
  • salt
  • 1 kilogram jumbo shrimp
  • 200 grams flour
  • 4.25 grams active dry yeast
  • 2 eggs (whites separated from yolks)
  • 12 ounces beer (choice)
  • vegetable oil (for frying)

Directions

  1. Boil some water with lemon and a bay leaf. When it comes to a boil, add salt and the shrimp.
  2. Once the shrimp have changed color, remove them and add them directly to a bowl of ice water.
  3. Peel the shrimp, leaving the tails on, and set aside.
  4. Sift the flour and yeast together.
  5. Whisk the egg yolks well and fold in the flour mixed with yeast.
  6. Incorporate the beer little by little until you have a medium-thick batter. Salt to taste but remember the shrimp are already salted.
  7. Beat the egg whites into soft peaks and carefully fold them into the batter.
  8. Pinching the shrimp by the tail, batter them, then fry them in plenty of hot oil until golden.

This shrimp in a jacket was the talk of my party last week. Everyone kept asking me where I bought them and were impressed when I told them that I made them. Exploding with flavor and had that fresh shrimp taste that everyone adored. I used fresh shrimp for this recipe which really helped with giving it that fresh flavor. A 5 star recipe that will be the star of all my parties.
