Description

What can get better than fried shrimp? These appetizers will have you licking your fingers and asking for more. They go great with beer or wine. A perfect way to start an evening among friends.

Ingredients

water
1 lemon
1 bay leaf
salt
1 kilogram jumbo shrimp
200 grams flour
4 1/4 grams active dry yeast
2 eggs (whites separated from yolks)
12 ounces beer (choice)
vegetable oil (for frying)

Directions

1Boil some water with lemon and a bay leaf. When it comes to a boil, add salt and the shrimp.
2Once the shrimp have changed color, remove them and add them directly to a bowl of ice water.
3Peel the shrimp, leaving the tails on, and set aside.
4Sift the flour and yeast together.
5Whisk the egg yolks well and fold in the flour mixed with yeast.
6Incorporate the beer little by little until you have a medium-thick batter. Salt to taste but remember the shrimp are already salted.
7Beat the egg whites into soft peaks and carefully fold them into the batter.
8Pinching the shrimp by the tail, batter them, then fry them in plenty of hot oil until golden.
