Shrimp and Toast Croquettes

  • 12 slices white bread
  • 24 deveined shrimp (peeled and)
  • 3 green onions (finely chopped)
  • 2 teaspoons fresh ginger (finely grated)
  • 1 tablespoon chopped cilantro
  • 1 egg white
  • 1 teaspoon cornstarch
  • 1 teaspoon soy sauce
  • 2 teaspoons sesame oil
  • 1/2 cup sesame seeds
  • 3 cups vegetable oil (to deep-fry)
  • plum sauce (to serve)

Directions

  1. Using a 2 inch cutter, cut bread into 24 rounds. Using a food processor blitz shrimp, green onions, ginger, cilantro, egg white, cornstarch, soy sauce and sesame oil until almost smooth. Season with salt and white pepper.
  2. Place sesame seeds on a plate. Spread one side of each bread piece with prawn mixture. Dip bread, prawn-side down, in seeds to coat.
  3. Heat oil in a large heavy-based saucepan (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry, in batches, for 1-2 mins or until golden and cooked through. Using a slotted spoon, transfer to paper towels to drain. Serve with plum sauce.
