Ingredients

  • 4 ounces shrimp (peeled, deveined, finely chopped)
  • 4 ounces ground pork
  • 4 green onions (finely sliced)
  • 2 teaspoons soy sauce
  • 1/2 teaspoon fresh root ginger (grated)
  • 24 squares wonton wrappers
  • 4 cups chicken stock
  • 1 tablespoon soy sauce
  • 1 piece fresh root ginger (peeled, cut into thin julienne)
  • 5 ounces fresh shiitake mushrooms (thinly sliced)

Directions

  1. Combine shrimp, ground pork, green onions, soy sauce and ginger in a bowl. Place 1 tsp mixture into center of each wrapper.
  2. Wet edges with a little water. Fold diagonally to form a triangle, pressing moistened edges together and using thumbs to press down on pastry around filling to secure and center it. Bring 2 points of long edge together, folding 1 point over other to overlap, and press to seal. As each dumpling is shaped, place on a tray lined with baking paper.
  3. To make broth, place stock, soy sauce, ginger and 2 cups water in a large saucepan and bring to a boil. Reduce heat to low. Add mushrooms and dumplings and simmer gently for 3-4 mins, until dumplings float.
