Shrimp and Octopus Pasta Dish

Description

Inspired by the flavors of the mediterranean, this seafood pasta dish features shrimp and octopus. Low in calories, this dish can also be made with whole wheat or gluten free pasta.

Ingredients

350 grams noodles (spaghetti)
500 grams octopus, cooked
200 grams prawns (cooked)
1 bunch coriander (chopped)
6 garlic cloves (chopped)
1 onions (small, chopped)
1/2 lemon juice
3 hard boiled eggs
black olives

Directions

1Heat a large pan of salted water. When it boils, add the noodles broken in half, and cook the pasta al dente. Remove from heat, and drain in a colander. Refresh with cold water to stop the cooking.
2In a large pan, heat a a generous amount of olive oil, add garlic, onion, and some coriander.
3When browned, add the octopus and shrimp, adjust the salt, and sprinkle with lemon juice.
4Add more chopped coriander, and let simmer for 5 minutes. Remove from heat.
5In a bowl, add the pasta, then the octopus and shrimp mixture.
6Add olives, sprinkle with olive oil, and mix well.
7Place the coarsely chopped boiled eggs on top, and sprinkle with the remaining coriander.
8Serve.
