Shrimp and Calamari Black Crepes

Description

In Italy, squid (or camari) ink is commonly added to homemade pasta doughs to tint them black. It's also commonly used in rice dishes, turning them a dramatic shade. Here, the same idea applies to coloring crepe batter so that it stands in stark juxtaposition to the paler filling, made by cooking shrimp and calamari in a bechamel (a.k.a. white) sauce. These are special-occasion crepes, and ideal for a Halloween party.

Ingredients

1 onions
1 tablespoon vegetable oil
3 calamari
200 grams shrimp
235 grams flour
heavy cream
2 eggs
350 milliliters milk
butter
squid
fresh parsley

Directions

1Add the oil to a skillet on medium heat. Add the onion and saute for 5 minutes.
2Add the calamari, shrimp, and 15 grams of flour and cook for 5 minutes. Slowly add the heavy cream until the texture is creamy.
3Add the remaining flour, eggs, and milk and mix well.
4Add some butter to a skillet on medium heat and add the crepe mix. Once bubbles appear on the surface, flip the crepes and set aside.
5Fill the crepes and serve warm.
