In Italy, squid (or camari) ink is commonly added to homemade pasta doughs to tint them black. It's also commonly used in rice dishes, turning them a dramatic shade. Here, the same idea applies to coloring crepe batter so that it stands in stark juxtaposition to the paler filling, made by cooking shrimp and calamari in a bechamel (a.k.a. white) sauce. These are special-occasion crepes, and ideal for a Halloween party.

Ingredients

  • 1 onion
  • 1 tablespoon vegetable oil
  • 3 calamari
  • 200 grams shrimp
  • 235 grams flour
  • heavy cream
  • 2 eggs
  • 350 milliliters milk
  • butter
  • squid
  • fresh parsley

Directions

  1. Add the oil to a skillet on medium heat. Add the onion and saute for 5 minutes.
  2. Add the calamari, shrimp, and 15 grams of flour and cook for 5 minutes. Slowly add the heavy cream until the texture is creamy.
  3. Add the remaining flour, eggs, and milk and mix well.
  4. Add some butter to a skillet on medium heat and add the crepe mix. Once bubbles appear on the surface, flip the crepes and set aside.
  5. Fill the crepes and serve warm.

This is an impressive and yet simple dish to prepare. I love crepes and so do my kids so I will definitely be making this dish again. It is elegant enough to serve for company but easy to prepare, so good for every day dinners.
