Ingredients

  • 1/2 pound penne pasta (uncooked)
  • 1 5/8 ounces Alfredo sauce
  • 1 1/2 cups milk
  • 1 teaspoon grated lemon peel
  • 2 tablespoons butter
  • mushrooms (1/2 pound med., sliced)
  • onion (1 med., chopped)
  • clove garlic (2 lg., crushed)
  • 12 ounces fresh spinach
  • 1 pound shrimp (shelled and drained)
  • 1/2 pound shredded mozzarella
  • 2 tablespoons grated parmesan

Directions

  1. Preheat oven 350 degrees. Cook pasta and drain. Prepare alfredo sauce, using milk. Stir in lemon peel. Set aside. In large skillet, melt butter. Add mushrooms, onion, garlic. Saute. Stir in spinach. Cover. Cook until spinach wilts. Stir in shrimp. Cook 2 minutes.
  2. Combine all ingredients in casserole dish. Bake for 30 minutes. Serves 4.
