When the weather outside is frightful, why not hunker down and create a hearty big pot of Shrimp Bread Stew to keep you warm and cozy. This six ingredient stew offers a healthy, filling meal that not only tastes great, but keeps the body warm on a cold day. By adding some two-day old dense bread, preferably Alentejo or whole wheat, it puts a think, hearty twist on this delicious meal in a bowl.

Ingredients

  • shrimp
  • 1 bread (Alentejo, or whole wheat bread, if possible, 2 days old)
  • olive oil
  • garlic (to taste)
  • 1 egg yolk
  • coriander

Directions

  1. Boil the shrimp.
  2. Moisten the sliced bread in the water used to boil the shrimp.
  3. In a sauce pan, heat a little bit of oil, and lightly fry the finely chopped garlic and shrimp.
  4. Drain the bread very well, and add to saucepan.
  5. Add chopped coriander.
  6. Remove saucepan from heat, and immediately add the egg yolk, stir quickly, and serve immediately.

I love seafood, especially shrimp, and I love this recipe. I thought this was more like stuffing than stew, but it was delicious and easy to put together. This recipe is a keeper and I will make this again.
