Description
Wild rice is a nice change from traditional rice with its bolder flavor and contrasting textures. In this recipe, the rice is paired with shiitake and portobello mushrooms for an earthy and bold dish. The rice is cooked in vegetable stock for an extra layer of flavor. A drizzle of chive-infused oil over the rice right before serving adds a nice little bit of extra flavor. You can serve this dish as the main star of a meal with a green salad on the side or as the side-dish to a grilled steak.
Ingredients

- 1.5 liters vegetable stock
- 300 grams wild rice
- 2 garlic cloves
- 200 grams shiitake mushrooms
- 200 grams portobello mushrooms
- salt
- ground black pepper
- olive oil
- 10 chives
Directions
- Add the stock to a saucepan on medium heat. Add the rice and cook for 25 minutes. Once cooked, remove from heat, drain, and set aside.
- In a skillet, add a tablespoon of oil to a skillet on medium heat. Add the garlic and saute for 2 minutes.
- Add the mushrooms and saute for 5 minutes.
- Add the rice to the skillet and saute for 5 minutes. Season with salt and black pepper to taste.
- In a bowl, add 100 grams of oil to a bowl with the chives. Mix well.
- Remove the chives after 5 minutes.
- Place the rice and drizzle with a small amount of oil.

This dish was very appetizing and I could not believe how meaty it was with the mushroom. They were very tender and the rice had lots of flavor and remained nice and fluffy. I plan to cook up this 5 star recipe again and again.
