Ingredients

  • 2 tablespoons olive oil
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 27 ounces diced tomatoes
  • 13 1/4 ounces pasta shells (large)
  • 8 3/4 ounces salami (soppressata, chopped)
  • 5 1/4 ounces pimento stuffed green olives (in chili oil, chopped)

Directions

  1. In a medium saucepan, heat oil over high heat. Cook onion for 4-5 mins, until tender and golden. Add garlic and cook for 30 seconds. Add tomatoes. Bring to a boil, reduce heat to low and simmer for 10 mins. Season.
  2. Meanwhile, cook pasta in boiling salted water until al dente. Drain.
  3. Heat a lightly oiled frying pan over high heat. Sauté salami for 4-5 mins, until crisp. Add pasta, tomato sauce and olives and toss to combine. Serve.
