Description
Tender brown sugar pork chops, caramelized sweet potatoes, and apples are the perfect combination of savory and sweet in this easy dinner made on one sheet pan. The recipe is a Yummly original created by Sara Mellas.
Ingredients

4 SERVINGS
- 1 1/2 lb. sweet potatoes
- 3 red baking apples (medium, like Fuji)
- 1 Tbsp. canola oil
- 1 1/2 Tbsp. maple syrup
- 1/4 tsp. canela
- 1 dash allspice
- 1/2 tsp. salt (for sweet potatoes)
- black pepper (to taste, for sweet potatoes)
- 4 pork loin chops (about 1 inch thick)
- 3/4 tsp. salt (for pork chops)
- black pepper (to taste, for pork chops)
- 2 tsp. light brown sugar (firmly packed)
- fresh thyme (for garnish, optional)

Directions
- Preheat the oven to 400°F.
- Line an extra-large baking sheet with parchment paper.
- Cut the sweet potato into 3/4-inch pieces. Transfer to a gallon-sized zip-top bag.

Great dinner!!! Hubby loved it. Note if you dont want flavors mixing into the apples, then separate the meat from the veggies by placing them on two separate foil/parchment paper on the same pan.

The pork chops and potatoes were pretty good. Personally, I didn't like the apples as much as I thought I would. Might try it again and just not worry about the apples.

It was really good. I had looked at some of the reviews and it was mentioned to make a bit more marinade which I did. My husband loved it.

Made dish for one, had to adjust spices. Followed cooking time even though I had one 8oz pork chop. Hard to believe that same instructions would be accurate for four 1.5 lb chops.I added onions, and would make again. I was very happy with result

it turned out rather well. it was fairly easy to make and everything tasted good. i will certainly make it again.

the apples got a little more done than I'd like because i was trying to keep it warm to long (hubby was late). i used a variety of apples, think I'd le to try pears next time.

brined the pork overnight and did a reverse sear at the end to add color. I would make it again, but without the apples as they soaked up juices from the pork and became uncomfortably savory

The apples and sweet potatoes soaked up the pork juices, which wasn’t very appetizing. I think if they are baked on separate pans it would be very good.
