  • 1/2 cup extra virgin olive oil (divided)
  • 1/2 cup orange juice (freshly squeezed)
  • 2 lb. chicken pieces (bone-in skin-on, I used a mix of thighs and drumsticks, be sure to trim excess skin off thighs)
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 white onion (or small yellow, peeled and sliced)
