Description

A little savory, a little sweet, and with little clean up! A perfect easy dinner for cool fall evenings.

Ingredients

  • 1 1/2 pounds baby potatoes (mixed)
  • 3 tablespoons olive oil (divided)
  • 1 pound brussels sprouts
  • 2 red baking apples (medium, like Fuji or Pink Lady)
  • 3 strips bacon
  • 2 teaspoons dijon mustard
  • 24 ounces chicken breasts (pounded to 3/4” thickness)
  • 1 3/4 teaspoons salt (divided)
  • black pepper

Directions

  1. Preheat the oven to 400° F.
  2. Line a large baking sheet with parchment paper.
  3. Dice the potatoes into 3/4” pieces and place in a large mixing bowl. Toss with 2 Tablespoons of olive oil, 1/2 teaspoon of salt, and black pepper, to taste.
  4. Arrange the potatoes of the baking sheet and transfer to the middle rack of the oven.
  5. Roast the potatoes for 10 minutes.
  6. Trim the ends from the Brussels sprouts and cut in half. Slice the apples 1/4” thick. Dice the bacon into 1/2” pieces.
  7. In a large mixing bowl, whisk together 1 Tablespoon of olive oil and the dijon mustard. Add the Brussels sprouts, apples, and bacon to the bowl. Season with 1/2 teaspoon salt and black pepper, to taste. Toss to evenly coat the sprouts and apples in the dressing.
  8. Open the oven. Shift the potatoes to one side of the baking sheet. Place the Brussels sprouts and apples on the other side of the sheet, and reserve the mixing bowl.
  9. Continue roasting for 5 minutes.
  10. Rinse the chicken cutlets and pat dry with paper towels. Place in the reserved mixing bowl. Season with 3/4 teaspoon of salt and black pepper. Use a rubber spatula to toss the chicken to coat in the residual oil and dijon.
  11. Open the oven. Shift the potatoes and Brussels sprouts to either side of the sheet, creating a space for the chicken. Lay the chicken onto the center of the baking sheet.
  12. Roast for 20 minutes, until the chicken is cooked through, the potatoes and bacon are crisp, and the Brussels sprouts and apples are tender.
  13. Remove the baking sheet from the oven. Plate and serve immediately.
