Ingredients

  • 2 cups kale leaves ( lacinato, stripped from the stems, and thinly sliced)
  • 1/2 pound broccoli (thinly shaved, I try to use the larger florets with a decent portion of the stalk attached for this, as they are easier to manage than the small ones - any extra broccoli can be reserved for another use!)
  • 1/2 pound Brussels sprouts (end trimmed, and thinly shaved)
  • 3 whole large egg yolks (*these will be consumed raw, so make sure you buy high-quality eggs or use pasteurized eggs)
  • 2 garlic cloves (small)
  • 2 anchovy fillets packed in oil (drained)
  • 1 tablespoon dijon mustard
  • 2 tablespoons lemon juice ( freshly squeezed)
  • 1/3 cup vegetable oil (or grapeseed)
  • 1 tablespoon white truffle oil (I use La Tourangelle brand!, optional)
  • 4 tablespoons parmigiano reggiano cheese (finely grated, plus more serving)
  • sea salt (kosher)
  • freshly ground black pepper
