  • 8 shiitake mushrooms (fresh or dry – you have to soak them first if they’re dried, thinly sliced)
  • 1 pound udon noodles (Japanese-style)
  • 2 1/2 teaspoons dark soy sauce
  • 2 1/2 teaspoons soy sauce
  • 1/4 teaspoon sugar
  • 1 bunch choy sum (or baby bok choy, washed and trimmed)

It was good, but I tweaked the recipe. Instead of dark soy sauce I just added molasses and it needs more vegetables!! We added bean sprouts, but maybe carrots, cabbage, snow peas!!
