  • 5 baby bok choy (cut lengthwise in quarters)
  • 8 gai lan (cut lengthwise in half)
  • 4 cups beansprouts
  • 6 scallions (sliced into 1″ pieces on the bias)
  • 6 cups udon (frozen)
  • 1 cup dipping sauce (sesame, recipe follows)
  • 3/4 cup ponzu
  • 3/4 cup soy sauce
  • sesame oil (splash of pure, to taste)
  • 6 tablespoons sesame paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (not aged)
  • 1 tablespoon superfine sugar
  • 1 teaspoon chicken stock
  • 1/4 cup hot water
