Directions
- Place the Smart Oven+ Baking Stone Attachment in oven. Select STONE BAKE mode and preheat to 425°F.
- Toss squash and onions with olive oil and season with salt and pepper. Spread out in even layer on Baking Stone. Roast 25 minutes until golden and tender. Remove from oven and cool slightly.
- Transfer squash to serving dish and sprinkle with bacon, chia seeds, sesame seeds and parsley. Serve immediately.

This recipe is absolutely delicious. It wins on so many fronts; it has wonderful variety of textures, flavours and colours. I love that it has ´naughty but nice’ bacon and healthy vegetables and super healthy grains. It takes a couple of hours in all to prepare from the start to prepare but was totally worth it if you cook enough squash for two meals.
