- 6 slices white bread (day-old)
- 14 ounces shrimp (medium raw, peeled and deveined)
- 2 spring onions (trimmed and finely chopped)
- 2 teaspoons fresh root ginger (finely grated)
- 1 large egg white
- 1 teaspoon cornstarch
- 2 teaspoons light soy sauce
- 1/4 teaspoon ground white pepper
- 4 tablespoons sesame seeds
- vegetable oil (to deep-fry)
Directions
- Cut the crusts from the bread. In a food processor, combine the shrimp, spring onions, ginger, egg white, cornstarch, soy sauce, and pepper; process until smooth.
- Spread the shrimp mixture evenly onto one side of each bread slice. Cut each slice into 4 triangles. Place the sesame seeds on a plate and press the bread, shrimp-side down, in to the sesame seeds to coat.
- Heat the oil in a wok or large heavy-based saucepan over moderately high heat (oil is ready when a cube of bread crisps quickly in 30 secs without absorbing oil). Deep-fry the toast in batches, prawn-side down for 1 min. Turn and cook for 30 secs more, or until golden brown. Drain on kitchen paper and serve immediately.
