- 1 cucumber (large, peeled)
- 1/2 yellow onion
- 3 Tbsp. vegetable oil
- 1 tsp. sesame oil
- 1 Tbsp. sugar
- 4 Tbsp. rice vinegar (seasoned)
- 1 pinch crushed red pepper
- cilantro (fresh, chopped, optional)

Directions
- Slice cucumber in half lengthwise and remove seeds. Thinly slice and place in shallow serving bowl. Thinly slice onion and toss with cucumber.
- In small bowl, stir together vegetable oil, sesame oil, sugar, seasoned rice vinegar and pinch of crushed red pepper. Drizzle over cucumbers and onions. Garnish with chopped fresh cilantro.
- Serves 4.
