Pine nuts are ground along with some sugar using a mortar and pestle (or a mini chopper), and stirred into the semolina mixture once it has thickened, lending it a distinctive flavor. These little cakes are just right for a weekend brunch or holiday dessert party, dusted with powdered sugar if desired.

Ingredients

  • 180 grams semolina
  • 800 milliliters milk
  • 100 grams sugar
  • 50 grams pine nuts (substitute with dried blueberries)
  • 20 grams butter
  • 4 eggs
  • salt
  • lemon peel

Directions

  1. Preheat the oven to 170C.
  2. Cook the semolina in the milk in a medium saucepan and add the pine nuts, ground in a mortar with the sugar once the mixture has thickened.
  3. Add the butter, a pinch of salt, and the lemon peel, add the eggs when the mixture has cooled.
  4. Fill the muffin liners with the mixture and bake them for approximately 50 minutes.
  5. Remove the treats from the oven, let them cool, and sprinkle them with powdered sugar.

Add the milk to the saucepan first on low heat and slowly stir in the semolina until it thickens up. I added a pinch of coriander and some cardamom to the milk. The pine nuts were yummy, but I have also tried it with chopped up raisins. It was delicious.
