Description

Cooked semolina in milk is the secret to these not-too-sweet treats, giving them a wonderfully rich, dense texture. Pine nuts are ground along with some sugar using a mortar and pestle (or a mini chopper), and stirred into the semolina mixture once it has thickened, lending it a distinctive flavor. These little cakes are just right for a weekend brunch or holiday dessert party, dusted with powdered sugar if desired.

Ingredients

  • 180 grams semolina
  • 800 milliliters milk
  • 100 grams sugar
  • 50 grams pinenuts (substitute with dried blueberries)
  • 20 grams butter
  • 4 eggs
  • salt
  • lemon peel

Directions

  1. Preheat the oven to 170C.
  2. Cook the semolina in the milk in a medium saucepan and add the pine nuts, ground in a mortar with the sugar once the mixture has thickened.
  3. Add the butter, a pinch of salt, and the lemon peel, add the eggs when the mixture has cooled.
  4. Fill the muffin liners with the mixture and bake them for approximately 50 minutes.
  5. Remove the treats from the oven, let them cool, and sprinkle them with powdered sugar.
