Description

Covered with a layer of homemade marzipan, this Segovia Layer Cake has a sweet and elegant finish.

- 8 eggs
- 2 egg yolks
- 150 grams sugar
- 200 grams flour (medium strong)
- 100 grams rice flour ((potato starch in the original))
- 25 grams butter (melted)
- 2 Tbsp. water (lukewarm)
- 250 grams sugar
- 200 mL water
- 1 glass liquor ((I put sweet wine))
- 7 egg yolks
- 150 grams sugar
- 75 mL water
- 500 grams ground almonds
- 500 grams icing sugar
- 2 egg whites

Directions
- Flours are weighed and reserved.
- Beat the eggs and yolks with the sugar until they blanch, 3-4 minutes in the Thermomix with the butterfly at speed 5 and 37 ºC. If you do not have Thermomix, you already know that the assembly is accelerated by beating the mixture in a bowl inserted in another bowl with warm water, since the temperature helps aeration.
- The oven is heated to 180 ºC.
