Make your own beads and dressing add an unusual flair to your salads. Enjoy the salty crunch of 3 types of seeds, mixed with almonds, and the sweet tartness of cranberries and blueberries. Add to any type of salad to turn it into a gourmet affair.

Ingredients

  • 2 egg whites
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sesame seeds
  • 2 tablespoons almond (pieces)
  • 1 tablespoon cranberries
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons hazelnut oil
  • salt
  • ground black pepper
  • fresh goat cheese
  • blueberries

Directions

  1. In a bowl, mix all the ingredients.
  2. Preheat oven to 180 degrees Celsius.
  3. Cover a baking sheet with parchment paper, and drop tablespoon sized mounds of the mixture on it.
  4. Bake for 8 to 10 minutes, let cool.
  5. For the salad dressing, mix 1 tablespoon of balsamic vinegar, 2 tablespoons of hazelnut oil, salt, and pepper.
  6. To serve, arrange goat cheese, blueberries, and 4 or 5 seed balls on each plate.
