Ingredients

  • 1 cup sour cream
  • 2 1/2 teaspoons seasoning salt (Lawry's®, divided)
  • 1/4 teaspoon pepper (Lawry's® Seasoned)
  • 2 cans peas (15 1/2 ounces each black-eyed, drained and rinsed)
  • 2 eggs (lightly beaten)
  • 1 cup finely chopped onion
  • 1/2 cup red bell pepper (finely chopped, Substitutions available finely chopped orange bell pepper)
  • 1/2 cup flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup vegetable oil

Directions

  1. 1Mix sour cream, 1/2 teaspoon of the seasoned salt and seasoned pepper in small bowl until well blended. Cover. Refrigerate until ready to serve.
  2. 2Mash black-eyed peas in large bowl. Stir in remaining ingredients, except oil, until well blended.
  3. 3Heat oil in large deep skillet on medium-high heat. Drop bean mixture into oil by 1/4-cupfuls, flattening slightly. Cook fritters, turning once, 7 minutes or until golden brown. Drain on paper towels. Keep warm while cooking remaining fritters. Serve warm fritters with sour cream mixture.
