- 1 pound sea scallops
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 tablespoons salted preserved lemons (chopped)
- 1 tablespoon shallot (chopped)
- 1 tablespoon cilantro (chopped)
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- Place the Smart Oven+ Baking Stone Attachment in oven. Select STONE BAKE mode and preheat to 425°F.
- Combine all ingredients and set aside.
- Dry scallops completely with paper towels. Melt butter and combine it with olive oil. Pour onto Baking Stone and let heat for 2-3 minutes. Arrange scallops on Baking Stone and sear 8-10 minutes, turning halfway through. Do not move scallops until time to turn.
- Remove scallops from Baking Stone and serve immediately with Preserved Lemon Relish.
